eBook: Food Cultures of the World

For information about how the world eats, see Ken Albala's The Food Cultures of the World Encyclopedia (Greenwood, 2011) in our EBSCO eBooks collection.

Four broad sections are divided geographically--Africa/Middle East, the Americas, Asia/Oceania, and Europe; each country within the region receives a chapter. While food is the encyclopedia's focus, chapters also include information on the countries' history, geography, and demographics before moving into the main topics: agricultural and farming, cooking, typical meals, diet and health. Specific dishes are discussed in addition to geographic differences within a country.

Our EBSCO eBook collection is available online to the students, faculty, and staff of Christian Brothers University.
